I Love Salsa

My friend, Amanda, commented that she loves Salsa. Oh yeah...me too!
However, I have never canned salsa cuz the variations are soooo different and sometimes it is really good for about 1/2 of a jar then I am sick of it and sometimes it is just plain bad. So I have never wanted to go to the work of all the chopping and stuff to only have a boat load of salsa that I don't like.
That has all changed now. My SIL Teri and her hubby Jay make great salsa that I don't get tired of. I have been gifted with a few jars over the last few years and I pretty much can eat the whole jar by myself. It is just that good.
This year I planted lots of tomatoes with the Salsa making plan in mind. All I needed was the recipe. So I emailed my SIL. Here is what she sent me...or it could have been Jay...or a combination of the two. They are ornery:
Salsa
Makes 27 Gallons
870 cups peeled & chopped tomatoes
130 1/2 Bell Peppers - chopped
348 med onions - chopped
522 jalapeno peppers - chopped
348 tsp salt
43 1/2 cups white vinegar
43 1/2 tsp garlic powder
cook all ingredients, uncovered for 30 minutes - 3 hours to desired thickness.
water bath 40 minutes
